Fugazza pizza or Genoese focaccia is a simple and classical preparation. Derived from the north of Italy, in its original preparation onion and oregano are the predominant flavors. Enjoy it with a Santa Helena Chardonnay or Santa Helena Sauvignon Blanc.

Ingredients

  • 400 gr of flour.
  • 15 gr of dry yeast.
  • Warm water.
  • 2 tsp of olive oil.
  • ½ tsp of salt.
  • 2 onions, thinly sliced.
  • Oregano.

Preparation

  1. Dissolve the dry yeast in a small cup with warm water and a teaspoon of sugar. Let it boil.
  2. Sift the flour with the salt and put it on the counter in crown shape. Empty the yeast and the oil in the middle. Add water while adding the flour.
  3. Blend until you get a smooth and elastic consistency. Make a ball, cover with a clean dishcloth and let rest for about 30 minutes.
  4. Smooth out dough with a rolling pin in an oven container, greasing a bit with oil and let rest about 15 minutes.
  5. Stretch and put in an oven tray greased with oil. Bake until brown or gold at the bottom.
  6. Cover the surface with onions cut into thin julienne strips and sautéed in olive oil without getting brown. Season with salt and oregano to taste. Bake in hot oven until dough is cooked and serve.
